Jerk Chicken
Ingredients:
½ large red onion or 1 sweet yellow onion
3 scotch bonnet peppers (or 2 habanero)
6-8 garlic gloves
3 Tbsp minced ginger
3 scallion stalks
1 lime
1 lemon
½ olive oil
1/4 cup vinegar
1/3 cup soy sauce
1 Tbsp Worcestershire sauce
2 ½ Tbsp salt
1 Tbsp ground black pepper
1 teaspoon garlic powder
2 Tbsp all spice
4 Tbsp brown sugar
1 tsp nutmeg
6-8 chicken wings
Directions:
Chop green onion, red onion, ginger, garlic and scotch bonnet.
Squeeze 1 lemon and 1 lime over chopped seasonings.
Add soy sauce, oil, vinegar, and Worcestershire sauce.
Wisk in salt, black pepper, garlic powder, allspice, brown sugar and nutmeg.
Pour marinade over chicken and seal tight in a Ziplock. Let sit for at least 3 hours in refrigerator.
Preheat oven to 400 F
Pat wings dry and place on roasting rack or in backing dish.
Bake wings for 35 minutes, then slowly baste wings with leftover marinade. Place in oven for additional 15-20 minutes or until dark brown and crispy.
Let cool then serve with your choice of sides.
